Cyan Brighton

The iconic Brighton hotel, the Grand Hotel, has opened its new restaurant. We were excited to go and try out their newest business venture called Cyan Brighton, a bar and resto with an emphasis on sustainability.

Astonishing Indoor Design

Behind its calm facade, Cyan Brighton is an all-day bar and restaurant that offers modern food selections. Named after its soothing colour palette of greenish blues, this Sussex eatery has been drawing in thirsty locals with its casual atmosphere and innovative dishes.

It is immediately noticeable that there is a large doorway leading to a large open bar as soon as you enter. This place gives customers plenty of opportunities – if they want quick service and only want to grab their food from the counter or sit at one of many tables there’s no problem! If they’re looking for some more relaxed dining with sweeping views then this restaurant has it covered. We chose a table so we could take all the time we needed to watch chefs cook our dishes while also getting up close and personal with as much staff on duty as possible.

Astounding Dining Experience

We walked into the restaurant and an immaculately dressed waiter quickly greets us with menus, drinks, a plate of crispbreads to nibble on (they are really tasty) along with some satay paste for enjoyment. We also got bread and spreads which were perfect because we ate those while waiting for our main dish to arrive!

 

We get our two starters, squid and ribs. The squid was soft instead of crispy with a breadcrumb coating and an oriental sauce which left me wanting more. I liked the lack of chewy texture that you find in calamari as well as it being softer than normal sushi rolls or sashimi for example.

The rib dish had just enough spiciness to make my mouth water without overwhelming the flavour profile too much; not over-salted but still packing some heat at least where barbecue is concerned – yum!

For the main, we had the two-course meal. The beef is cooked to perfection and the pork is juicy. We also got some vegetables done to perfection with big crispy Yorkshire puddings topped off by a rich gravy.

 

If you think that’s good, we also have some sweet treats for dessert such as treacle tart with clotted cream and orange blossom.

 

 

Drinks Menu

The cocktail list at Cyan sounds like the perfect drink to enjoy after a long day. We love that they offer something for everyone, from fruity drinks with hints of citrus and creaminess or stiffer cocktails meant for sipping on all evening. Alongside the delicious choices is an equally tempting wine menu full of flavorful options guaranteed to please any palate!

 

The atmosphere, service and food make for an amazing experience. The wine was especially good too; I’ll be back to try other dishes on the menu!
